In a bowl, mix cooked vermicelli with shredded cabbage, carrots, bell peppers, and pumpkin seeds. Add a tamari-ginger dressing and toss until well combined. Top with grilled tofu for added protein.

Mangetout and Coconut Stir-Fry

Make a quick vibrant plant-based dish by stir-frying cooked organic vermicelli with crunchy mangetout, colourful vegetables, and a luscious coconut sauce. Start by stir-frying mangetout and other vegetables in a wok, then add cooked vermicelli and a blend of coconut milk, tamari soy sauce, and a hint of chilli flakes for a rich and aromatic flavour.
