Create a unique and nutritious salad by toasting pine nuts and tossing them with roasted vegetables such as butternut squash, red peppers, and courgettes. Add a mix of fresh greens and a light vinaigrette dressing for a satisfying and flavourful plant-based meal. The pine nuts add crunch and nutty flavour to the salad.

Quinoa Salad with Pine Nuts


Cook quinoa in vegetable broth until tender, then let it rest. Steam asparagus briefly, rinse with cold water, and drain. Create a dressing by mixing 1 clove of garlic, 2 tbsp reserved oil from sundried tomatoes, 1/4 cup of freshly squeezed lemon juice, 2 tbsp of freshly chopped oregano, 2 tbsp freshly chopped basil, and salt and pepper in a large bowl, then mix in the quinoa, asparagus, sundried tomatoes, olives, and onions. Toss gently, top with toasted pine nuts, and serve.
