Classic Macaroni and Cheese

Cook the organic macaroni and whilst it's cooking, in a separate pan, melt butter and stir in flour to make a roux. Gradually add milk and stir until thickened. Add grated cheese and stir until melted. Season with salt, pepper, and a pinch of nutmeg. Mix the cheese sauce with the cooked macaroni and transfer to a baking dish. Top with breadcrumbs and bake until golden and bubbly.

Mediterranean Macaroni Salad

Cook the organic macaroni and let it cool. In a large bowl, combine the macaroni with diced cucumber, cherry tomatoes, red onion, feta cheese, and black olives. In a separate bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper. Pour the dressing over the macaroni mixture and toss to combine. Chill for at least an hour before serving.

Macaroni and Cheese Stuffed Peppers
