Green Peppercorn Split Pea Soup


Combine 1 cup rinsed green split peas, diced onion, carrots, celery, and minced garlic, with 6 cups vegetable broth, bay leaf, and thyme. Simmer for 45-60 minutes, add 2 tablespoons crushed green peppercorns, salt, and pepper. Discard bay leaf. Optionally blend for creaminess. Serve hot, garnished with more green peppercorns.
