Sweet Quinoa & Coconut Balls

Sweet Quinoa & Coconut Balls are a healthy and delicious snack that combines the nutty flavour of quinoa with the tropical richness of coconut. Packed with protein, fibre, and healthy fats, these bite-sized treats are perfect for a quick energy boost.

The quinoa provides a hearty base, while the coconut adds natural sweetness and a chewy texture. These balls are easy to prepare, making them an ideal option for meal prep, snacks on-the-go, or a nutritious dessert. The combination of ingredients makes them a guilt-free indulgence, perfect for those following a gluten-free, dairy-free, or plant-based diet.

  1. In a saucepan, heat the coconut oil, agave syrup, and ground ginger over low heat, stirring until the mixture is smooth and well combined. Add the peanut butter and stir until fully incorporated.

  2. In a large mixing bowl, combine the puffed quinoa, sliced almonds, coarse oats, mixed spice, sea salt, and desiccated coconut. Stir to distribute the ingredients evenly

  3. Pour the melted wet mixture over the dry ingredients. Mix thoroughly until all the dry ingredients are evenly coated and sticky.

  4. Using your hands, roll the mixture into small balls, about the size of a walnut. If needed, add extra oats or desiccated coconut to help form the balls.

  5. Place the balls on a tray lined with parchment paper. Refrigerate for at least 30 minutes to allow them to firm up.

  6. Garnish (Optional): Roll the chilled balls in desiccated coconut or sliced almonds for added texture and presentation.
