  1. Combine the coarse oats, rye, barley, and buckwheat in a saucepan. Add 700ml water and the bay leaf. Stir gently to combine. Bring to a boil, then reduce the heat to a simmer. Cover and cook for 15–20 minutes, stirring occasionally, until the grains are tender and the mixture is thickened.

  2. Stir in the cinnamon and nutmeg, ensuring they are evenly distributed.
    Add the grated apple and dried cranberries to the saucepan. Continue to cook for an additional 5 minutes, allowing the flavours to meld and the cranberries to soften.

  3. Remove the bay leaf from the saucepan. Stir in the agave syrup and lemon zest, adjusting sweetness to taste.

  4. Divide the porridge into bowls and serve warm. For extra creaminess, top with a splash of almond milk or your favourite plant-based milk.

Oats provide fibre that helps to regulate digestion, while millet and barley add a rich source of B-vitamins, supporting energy production. The warming spices help reduce inflammation and promote digestion, making this porridge an excellent way to kick-start your day with nourishment and warmth.
